How to protect your photos

Hi,

So I've been approached by a small local charity, which I worked for last year and they have asked if they could use some of my photos to design a poster to advertise one of their events.

Now I'm not saying I do not trust them, but I do have concerns as one of the photos they would like to use is one of the best shots I have ever taken, so I am naturally very protective of it.

What I am wondering is what can I do to better protect my image from copyright, or being used for more than I am comfortable with it being used for and to ensure I can prove that I own the image.

Any help or advice would be much appreciated.
