Canon - Converting from Adobe RGB to sRGB

In Lightroom, when I print, I have the option to select Perceptual and Relative.

The perceptual rendering adjusts all the colors in your image so that the relationship between all the colors remains the same. And I completely understand this.

But when I save a Raw image with an Adobe RGB color space to a jpg image with an sRGB colorspace, it does not give me these options. So which one is it selecting?

I have been shooting in Adobe RGB and printing at home, but now I want to send something to the printer, and I am not sure how to know whether the colors will be right when I create the digital file.

As a side note, is there any way to shoot in raw AdobeRBG and convert to raw sRGB?

I was shooting AdobeRGB for the wider color gamut to future proof my digital images, but I am starting to think I should switch to sRGB. I also just heard that the color transitions are smoother in sRGB because the colors are closer together than in Adobe RGB. No idea if this is true.
